Vinaigre balsamique au concombre et citron

I’ve been drizzling this over a simple spinach salad every night and it’s honestly the only dressing I need right now. The cucumber really comes through fresh, and the Meyer lemon keeps it bright without being too sharp. Even my husband, who usually skips salads, asked for seconds.

This stuff is genuinely good in a simple vinaigrette; the Meyer lemon gives it a nice sweet-tart edge that doesn't fight the cucumber. Only wish the bottle had a smaller pour spout, since it comes out faster than I'd like. Still, it's become my go-to for brightening up a boring salad.
